La t&eacute;cnica de la hormiguita y las compras inteligentes.<\/strong><\/h5>\n<p>La obesidad en nuestro pa&iacute;s aument&oacute; 34% en adultos mayores de 18 a&ntilde;os,&nbsp;mientras que el sobrepeso y obesidad de 5 a 17 a&ntilde;os supera el 20%. Los motivos: aumento del sedentarismo, bajo consumo de frutas y verduras, as&iacute; como de agua, y excesos en alimentos ultraprocesados y con az&uacute;car. Este dato surge de Encuesta Nacional de Nutrici&oacute;n y Salud y&nbsp;es previo a la cuarentena. Es de suponer que hay una tendencia en aumento debido a la situaci&oacute;n de aislamiento social y de permanencia en las casas.<\/p>\n<p>Quiz&aacute;s las famosas frases de Hip&oacute;crates &ldquo;somos lo que comemos&rdquo; y &ldquo;que tu alimento sea tu medicina&rdquo; nos ayuden a imaginarnos c&oacute;mo queremos estar cuando termine la cuarentena. No hay una sola receta para comer bien y alimentarse. Pero s&iacute; hay que tener en cuenta que comer es un acto involuntario y alimentarse es un hecho consciente (o voluntario) en el que elegimos qu&eacute; ingerir en beneficio de nuestra salud. Hoy tenemos la oportunidad de recrear nuestros h&aacute;bitos saludables y hasta compartirlos en familia.<\/p>\n<p><strong>Por d&oacute;nde empezamos<\/strong><\/p>\n<p>La premisa es equilibrar la dieta con alimentos nutritivos, econ&oacute;micos y saludables. C&oacute;mo se logra: evitando grasas, az&uacute;car, jugos y gaseosas industrializados, que adem&aacute;s tienen mucha cantidad de sodio. Y, por supuesto, aumentando el consumo de frutas y vegetales de estaci&oacute;n y regionales. Jugamos con ventaja porque Mendoza es el pa&iacute;s el primer productor de frutas y el segundo de vegetales comestibles del pa&iacute;s.<\/p>\n<p>Adem&aacute;s, pronto llegar&aacute; el fr&iacute;o, lo cual podr&iacute;a provocar el aumento en el consumo de grasas y harinas y sus derivados. Para la temporada de oto&ntilde;o-invierno, se sugiere mayor consumo de legumbres (lentejas, porotos, garbanzos) en diferentes preparaciones. No solo los guisos sino ensaladas tibias combinadas con fideos o arroz. El trigo burgol es tambi&eacute;n muy nutritivo y, combinado con vegetales frescos, resulta en la famosa ensalada &ldquo;tabule&rdquo;, de origen &aacute;rabe. Mendoza tiene una cultura muy variada de alimentaci&oacute;n que proviene de diversas culturas, como la italiana, espa&ntilde;ola, &aacute;rabe y jud&iacute;a.<\/p>\n<p><strong>La t&eacute;cnica de la hormiguita<\/strong><\/p>\n<p>Guardar hoy para el invierno es una opci&oacute;n inteligente. Las conservas caseras son econ&oacute;micas y nutritivas. No obstante, es imprescindible tener mucho cuidado en la higiene y seguridad, tanto en la elaboraci&oacute;n como en el envasado. Cada conserva tiene un tiempo de cocci&oacute;n y tambi&eacute;n de vencimiento.<\/p>\n<p>Lo m&aacute;s riesgoso y menos recomendado de elaborar, salvo que seamos expertos, son los alimentos como morrones y pimientos, berenjenas y&nbsp; tomates.<\/p>\n<p>Igualmente hay muchas otras alternativas: dulces, mermeladas y jaleas caseras, el arrope (a base de uva), as&iacute; como el envasado de frutas enteras para postre. En esta &eacute;poca tambi&eacute;n es propicio el secado de frutas y verduras.<\/p>\n<p>Los escabeches son otra buena opci&oacute;n. Entre los m&aacute;s aceptados hay de zanahoria, pepino, coliflor, berenjena y cebollitas.<\/p>\n<p>Al igual que para las compras del d&iacute;a, la clave es elaborar conservas con los productos regionales y de temporada: son m&aacute;s econ&oacute;micos y m&aacute;s frescos.<\/p>\n<p><strong>Men&uacute; nutritivo y barato<\/strong><\/p>\n<p>Hay recursos que podr&iacute;amos estar desperdiciando y solo con usar nuestra creatividad podemos ahorrar y alimentarnos mejor. A modo de ejemplo: las hojas de la remolacha pueden ser la base de croquetas, tortillas, budines o el relleno de canelones, sac&aacute;ndoles el tallito rojo en este &uacute;ltimo caso. Aportan vitamina A, fibras as&iacute; como hierro de origen vegetal, que tambi&eacute;n se encuentra en el perejil.<\/p>\n<p>Las hojas frescas del rabanito pueden consumirse en una ensalada de verdes combinada con lechuga y hasta con espinaca cruda. En tortilla o en tarta junto con acelga, espinaca y por qu&eacute; no con las hojas de la remolacha. Las hojitas del rabanito aportan vitaminas C y B y fibras.<\/p>\n<p>La humita es un plato regional a base de choclo y zapallo, ambos vegetales son regionales y de esta temporada.<\/p>\n<p>Otro <em>tip<\/em> de nutrici&oacute;n es cocinar los vegetales con la c&aacute;scara.&nbsp;La papa y el camote, entre otros, conviene elaborarlos enteros para luego pelarlos. As&iacute; mantienen todos sus nutrientes. En el agua en el que cocinamos los vegetales se concentran las vitaminas y minerales y es un buen recurso para producir salsas, sopas y guisos.<\/p>\n<p><strong>Las claves <\/strong><\/p>\n<p>-Consumir porciones justas, intentando no repetir para evitar excesos. Ayuda a mantener un peso saludable y evita el sobrepeso y la obesidad.<\/p>\n<p>-Planificar las comidas semanales teniendo en cuenta gustos familiares&nbsp;y un men&uacute; equilibrado. As&iacute;, elaborar una lista completa y, al organizar las compras, saldremos menos veces para la misma gesti&oacute;n.<\/p>\n<p>-Mantener horarios regulares para realizar las comidas del d&iacute;a y, si es posible, comer en familia.<\/p>\n<p>-Realizar compras inteligentes, lo que implica:<\/p>\n<p>. Elegir los alimentos frescos, de temporada o estaci&oacute;n y regionales que resultan m&aacute;s econ&oacute;micos y nutritivos.<\/p>\n<p>. Hacer pedidos a los proveedores de alimentos que venden sin intermediarios, con distribuci&oacute;n puerta a puerta.
